I don’t know about you, but every time I say “mung” I think about how it rhymes with “dung.” Just that coincidental word association might have been enough to dissuade me from including this one on The List, but then I discovered mung beans are the crunchy sprouts in fried rice! I’ve now actually sprouted my own mung beans for the express purpose of adding them to my killer homemade fried rice.
In another stunning revelation, I found out the “bean” in bean thread noodles (aka Chinese vermicelli or glass noodles) is also mung beans! I was elated to realize this was one legume I wouldn’t have to force myself to endure. I already know I love japchae at Korean restaurants and pad sen wen at Thai restaurants, so checking this one off the list is downright delightful!
